Wood Pellets for Smoking: Hickory or Applewood
- Season the wings
- Set the pellet smoker grill to 180° F.
- Put the wings on the grill
- Allow the wings to smoke for 1 hour.
- After that, up the temperature to 250°F.
- Cook until the meat temperature is 180° F. (Go 15 degrees over 165° F, to crisp the skin.)
- Remove the wings and allow them to rest for about 5-10 minutes, to reabsorb juices.
