Chicken seasoning of choice
Wood Pellets for Smoking: Hickory, Applewood or Red Oak
- Season the wings with your seasoning of choice.
- Warm the smoker up to 180° F.
- Place the wings on the grill.
- Allow them to smoke at 180° F. for an hour.
- Then up the temperature to 250° F.
- Continue to smoke the wings until the meat temperature is 180° F. (This may take about another 40 minutes.)
- Allow the wings to rest for about 5 minutes.
